Where Cinnamon Begins

The sun has only just begun to warm the earth. The leaves are still damp from the night, and somewhere among the trees, a fresh cinnamon branch has been cut.

At first, it does not look extraordinary.

Just a slender branch from a small evergreen tree.

Before cinnamon reaches a kitchen, a teacup or a beautifully packed box, there is a process that has changed remarkably little over generations.

The branch is prepared carefully.

The rough outer bark is removed.

Then, with a trained hand and a simple tool, the precious inner bark is loosened and peeled away in long, delicate strips.

It is patient work.

Too much pressure can damage the bark. Too little will not release it cleanly. The person doing the work knows this almost instinctively.

That knowledge does not come from reading instructions.

The thin pieces of bark are placed together, one inside another, until they begin to form a long cinnamon quill. As it dries, the bark curls naturally into the familiar shape that has become a symbol of true Ceylon cinnamon.
