Ceylon Cinnamon Chicken Curry Recipe:

- 1 lb chicken breast, cut into cubes
- 2 tbsp Ceylon Especias Ceylon Cinnamon
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp ginger, grated
- 1 can coconut milk
- 1 tbsp curry powder
- 1 tsp turmeric
- Salt and pepper to taste
- Fresh cilantro for garnish
- 2 tbsp vegetable oil

1. Heat the vegetable oil in a large pan over medium heat.
2. Add the chopped onion and sauté until golden brown.
3. Stir in the garlic and ginger, cooking for another 2 minutes.
4. Add the chicken cubes and cook until they are browned on all sides.
5. Sprinkle the curry powder, turmeric, and Ceylon Cinnamon over the chicken, stirring well to coat.
6. Pour in the coconut milk, season with salt and pepper, and bring to a simmer.
