Ingredients:

For the Marinade:

  • 1.5 lbs (700g) pork shoulder, cut into bite-sized pieces
  • 1 teaspoon Ceylon Especias Cinnamon Powder
  • 1 teaspoon Ceylon Especias Black Pepper Powder
  • 1 teaspoon Ceylon Especias Turmeric Powder
  • 1 teaspoon Ceylon Especias Chilli Powder
  • Salt to taste

For the Curry:

  • 2 tablespoons vegetable oil
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2-3 green chilies, slit (adjust to your spice preference)
  • 2 teaspoons Ceylon Especias Curry Powder
  • 1 cup coconut milk
  • 1 cup water
  • Salt to taste
  • Fresh cilantro leaves for garnish

Instructions:

  1. Marinate the Pork:

    • In a large bowl, combine the pork pieces with Ceylon Especias Cinnamon Powder, Black Pepper Powder, Turmeric Powder, Chilli Powder, and salt. Mix well to coat the pork evenly. Let it marinate for at least 30 minutes (or longer for better flavor) in the refrigerator.
  2. Prepare the Curry Base:

    • Heat the vegetable oil in a large, deep pan or a Dutch oven over medium heat.
    • Add the finely chopped onions and sauté until they turn translucent and start to brown, which may take about 5-7 minutes.
    • Add the minced garlic, ginger, and green chilies. Sauté for another 2-3 minutes until the raw smell disappears.
  3. Cook the Pork:

    • Add the marinated pork to the pan and sear it until it turns brown on all sides. This should take about 5-7 minutes.
  4. Add Spices and Liquids:

    • Sprinkle the Ceylon Especias Curry Powder over the pork and mix well to coat.
    • Pour in the coconut milk and water. Stir to combine everything, and bring the mixture to a gentle simmer.
  5. Simmer and Cook:

    • Reduce the heat to low, cover the pan, and let the curry simmer for about 45-60 minutes or until the pork becomes tender. Stir occasionally to prevent sticking, and add more water if needed.
  6. Adjust Seasoning:

    • Taste the curry and adjust the salt and spice levels according to your preference. You can add more Ceylon Especias Chilli Powder if you want it spicier.
  7. Serve:

    • Once the pork is tender and the curry has thickened to your liking, remove it from heat.
    • Garnish with fresh cilantro leaves.
  8. Serve Hot:
